DIY Five Elements Crystal Mooncakes, no burden for patients with chronic diseases

The Mid-Autumn Festival is approaching, and mooncakes of various flavors are coming out, making them irresistible to many diabetics or people who want to lose weight. A nutritionist from the Department of Nutrition at the Linsen Branch of Taipei Municipal United Hospital designed the "Five Elements Crystal Mooncake" to teach everyone how to eat mooncakes healthily without any burden.

The so-called Five Elements Crystal Mooncakes mainly refer to the health-preserving concept of the five elements and five colors in traditional Chinese medicine. Five natural ingredients (red beans, mung beans, pumpkin, coix seeds, and black sesame seeds) are selected to make five flavors of fillings. In particular, the crust of the Five Elements Crystal Mooncakes is made of low-nitrogen starch ingredients (Imperial Dew Powder). The finished product is clear and transparent, with a tender, chewy, refreshing and non-greasy taste. Putting a plate of combined pomelo and crystal mooncakes on the table and brewing a pot of fragrant light tea is a very good combination!

Ingredients: 50 grams of Royal Dew powder (konjac gum, tapioca starch, white sugar), 100 grams of zero-calorie sweetener - erythritol, green tea, water filling (10 grams/piece) includes five flavors: red bean, mung bean, pumpkin, coix seed, and black sesame.

Production: The method of making Five Elements Crystal Mooncake is quite simple. Put green tea into water, boil it and let it cool for later use. Steam the filling, mix it and divide it into small particles. Mix the sugar substitute and Royal Dew powder in a dry pot, then pour in the brewed green tea (about 800cc), mix well and heat to boiling. When the batter becomes transparent, pour the green tea batter into the mold, put in the filling and wait for it to cool.

Homemade crystal mooncakes are made with low-nitrogen starch ingredients and contain less sugar and fat. Compared with commercially available mooncakes that are high in fat, sugar and calories, they are a great boon for patients with chronic diseases such as diabetes, chronic kidney disease and hyperlipidemia.
