An outbreak of highly pathogenic avian influenza (H5N6) with the risk of transmission from poultry to humans has occurred in China. Many people are worried about eating, fearing that the virus attached to chicken, duck, goose meat and eggs will be ingested and harm their health. The Tung Foundation said that as long as poultry and eggs are "fully cooked", people do not need to worry too much. In contrast, what needs attention is the undercooked egg dishes that are easily overlooked, such as Korean bibimbap, salad dip, and tiramisu. Two principles to prevent avian influenza: eat cooked food and wash hands frequently The Tung Foundation emphasizes that "eating well-cooked food" and "washing hands frequently" are unchanging principles for self-protection. Wash your hands with soap for at least 20 to 30 seconds before cooking, after handling raw meat and eggs, before eating, after going to the toilet and after touching poultry. The avian influenza virus cannot withstand high temperatures, so the best way is to "fully cook" poultry and eggs. Regardless of the cooking method, whether frying, boiling, baking or deep-frying, they must be fully cooked until the bones are free of blood and the meat is bloodless. Moreover, when eggs are fully cooked, the protein is easier to digest and the nutrients are more completely absorbed. In addition, before cooking eggs, you should first make sure that the eggshell has no cracks or damage, then rinse and scrub the eggshell with clean water, and then immediately beat the eggs into the dish to avoid dirt coming into contact with the egg white and yolk when the eggshell is cracked. After consumers buy poultry and eggs, they can store them separately in plastic bags or containers to prevent blood and dirt from contaminating other foods in the refrigerator. Knives and cutting boards should not be used together to handle raw and cooked food to reduce cross infection. Which poultry, meat and egg dishes may be undercooked? A table will tell you! The Tung Foundation reminds that there is no need to panic or refuse to eat during the avian influenza period. Just remember to eat "fully cooked" poultry and eggs and you can rest assured. In particular, when eating out, you should pay special attention to foods that may contain undercooked poultry and eggs (as shown in the table below) to reduce the risk of infection. |
