Chiu Shih-han, a nutritionist at the Millennium Love Health Foundation, believes that the reason why white corn has a relatively low calorie content may be that it contains less sugar and more resistant starch. Resistant starch, also known as "difficult to digest starch", has lower calories than "fast-digested or slowly-digested starch" and is more helpful for weight loss.
