This is because the iron in food enters the digestive tract in the form of trivalent colloidal iron hydroxide. After the action of gastric juice, high-valent iron is converted into low-valent iron before it can be absorbed. However, tea contains tannic acid, which easily forms insoluble tannic acid iron after drinking, thus hindering the absorption of iron.
