Liu Bowen, executive director of the Taiwan Obesity Prevention and Treatment Health Education Association and a weight loss specialist, pointed out that the Chinese New Year is approaching, and the table is full of New Year's Eve dinner. In addition, according to traditional customs, it cannot be finished. There must be "spring" (Taiwanese), which symbolizes a good harvest in the coming year. Therefore, every household has some leftovers. Coupled with the concept of not wasting, these meals, which were originally delicious dishes, are reheated and eaten repeatedly.

Reheating leftovers will increase the glycemic index

It is worth noting that the elders in the family may be more thrifty and may want to finish the food before they have to eat all the dishes again. Little do people know that these leftovers are the killers of obesity. This is mainly because the nutrients in leftovers are destroyed after being heated and cooked continuously, and if not cooked properly, they will turn into fattening foods with a high glycemic index.

For example, if cold rice is cooked into porridge for a long time, the glycemic index will be higher, which is more likely to cause obesity. Moreover, because the food will lose water after being cooked multiple times, the saltiness will increase and the GI value will also increase. Love leftovers? People with three highs should be careful

Dr. Liu Boen emphasized that according to past outpatient experience, many mothers often gain weight suddenly after the Chinese New Year. After questioning, it was found that eating leftovers is the main cause of obesity, especially for obese women with a history of three highs. Due to poor metabolism and poor diet control during the New Year, their blood sugar, blood lipids and blood pressure are all high, which often causes their weight to get out of control.

Faced with the hidden danger of obesity caused by New Year's leftovers, doctors remind that incorrect cooking methods can still cause obesity even if the calories and portion sizes are right. It is recommended that leftovers can only be eaten for one meal at most, and the remaining oil should be washed off with hot water before eating. For meat that has been braised for several days, the floating oil should be removed first. Don't ever think of doing it once and for all and cook one day and eat for several days.

It is best not to reheat leftovers more than twice.

In addition, it should be noted that repeatedly heated leftovers will produce nitrates and nitrites after metabolism in the gastrointestinal tract, which will synthesize nitrosamines in the gastrointestinal tract. Nitrosamines can destroy the hemoglobin in the human body. If absorbed in large quantities, it not only means that the food is no longer fresh, but it may even increase the risk of stomach cancer.
