Anti-cancer New Year’s Eve dinner! Nutritionists strongly recommend Lucky Mushroom

The Cancer Care Foundation reminds that these commercially available New Year's dishes are generally high in calories and contain a lot of added sugar, oil and salt. Eating too much can lead to obesity and may increase the risk of cancer. It is recommended that the public use fresh and natural anti-cancer ingredients, such as broccoli, shiitake mushrooms, etc., to make New Year's dishes at home. The preparation is simple and eating is safe and healthy.

Chen Yueqing, chairman of the Cancer Care Foundation, said that traditional New Year dishes are high in calories, with each person consuming about 3,200 calories. Eating them for nine consecutive days during the New Year holiday will not only cause a surge in weight, but also cause damage to the body and mind. Since there are four food traps for modern people: too much refined food, too much fat, too much sugar, and too much eating out, if you can reduce eating out, buy less takeout New Year's Eve dishes, choose the right ingredients that are in abundance in the season, cook some of the New Year's Eve dishes yourself, and control your intake moderately, you can still have a healthy New Year and not be afraid of gaining weight no matter how much you eat.

To stay away from the threats of obesity, chronic diseases and cancer, you can refer to the list of anti-cancer foods provided by the American Institute for Cancer Research (AICR) for your daily diet, and give priority to natural foods such as cruciferous vegetables, dark green vegetables, mushrooms, tomatoes, whole grains, nuts and beans. As for how to transform these anti-cancer ingredients into delicious New Year's dishes, Cancer Care Foundation nutritionist Huang Shuyi demonstrated the preparation of 4 healthy New Year's dishes for your reference.

【Lucky Mushroom】 (6 servings)

  • Material:

    1. Half a medium-sized white radish and 2 king oyster mushrooms.

    2. 5 eggs, 1/4 of each red and yellow bell pepper.

    3. A little sea salt, a little kelp soy sauce, and a little lotus root powder.

  • practice:

    1. Wash and peel the white radish, then cut into 1 cm thick slices.

    2. Wash the king oyster mushrooms and cut into thin slices.

    3. Wash the cauliflower, cut into small florets, add salt and blanch until cooked.

    4. Add water and kelp soy sauce to white radish and king oyster mushrooms to cover the ingredients, put them into the rice cooker and stew for half an hour, then take them out and spread them on the edge of a large bowl.

    5. Dice the bell pepper and set aside. Beat the eggs and add a little sea salt to taste. Heat up a pan with oil and scramble the bell pepper with eggs until 80% cooked. Pour into the center of the large bowl from step 3 and press it tightly with a spoon. Steam in a rice cooker for 5 minutes. Turn it upside down on a plate and place the cauliflower around it. Finally, thicken with lotus root powder and serve.

【Good luck for years to come】 (for 6 people)

  • Material:

    1. 1/4 cup black rice + 1/4 cup white glutinous rice.

    2. 1/4 cup oatmeal + 1/4 cup white glutinous rice, 1 tablespoon red yeast rice.

    3. 200 grams of lean minced meat, 2 dried mushrooms, 4 water chestnuts, 2 green onions, a little minced ginger, a little sea salt, and a little pepper.

  • practice:

    1. First wash the rice in ingredient 1, soak it for 3 hours and then drain it for later use.

    2. Wash the rice in ingredient 2, add red yeast rice and soak for 3 hours, then drain and set aside.

    3. Wash and chop ingredient 3, season appropriately, shape into balls, evenly coat with the rice from ingredients 1 and 2, put into rice cooker, put 1 cup of water in the outer pot, wait for the rice cooker to pop, and simmer for 10 minutes before serving.

  • Ingredients: 300 grams of candied red beans, 120 grams of oatmeal (oatmeal grains can also be used), 80 grams of lotus root powder, 500cc of fresh milk, 300cc of water, and appropriate amount of coconut powder.

  • practice:

    1. Put oatmeal, lotus root powder, fresh milk and water into a blender and blend for 3 minutes. Pour into the inner pot of an electric rice cooker and add candied red beans and mix evenly. Put 2 cups of water in the outer pot and steam until cooked, then let cool.

    2. Invert onto a plate, sprinkle with coconut flour and serve.

  • Ingredients: 200 grams of cauliflower, 300 grams of sweet potato, 1/4 onion, 1 slice of cheese, 2 tablespoons of cashews, 1 teaspoon of sea salt, 1 teaspoon of curry powder, a pinch of black pepper, 1 slice of old ginger.

  • practice:

    1. Cut the cauliflower into small florets and slice the onion. Blanch both ingredients and set aside.

    2. Cut the sweet potato into small pieces, steam in rice cooker and set aside.

    3. Put all the ingredients into a blender and blend for 1 and a half minutes.
