Nutritionists recommend sweet vegetable soup to replenish energy

Shishen Tremella Soup is made with Tremella, snow lotus seeds, large coix seeds, gorgon seeds, red dates, wolfberries, soybeans and other ingredients. First, soak the snow lotus seeds, coix seeds, gorgon seeds, soybeans and Tremella overnight, put them into the rice cooker and steam them until the colloid of the Tremella is released and the soup becomes thick. Then add the red dates and wolfberries and steam them again in the rice cooker. Finally, add sugar substitute to taste according to personal taste, and the simple and nutritious Shishen Tremella Soup is ready.

Shishen Tremella Soup Recipe

Ingredients (5 servings): 100g snow lotus seeds, 50g large coix seeds, 25g Euryale ferox, 10g red dates, 10g wolfberry, 250g white fungus (1 piece), 50g soybeans, sugar substitute according to personal preference, 2500cc water.

1. Soak snow lotus seeds, coix seeds, Euryale ferox and soybeans the night before.

2. Soak the dried Tremella in advance for 3 to 6 hours.

3. Cut off the hard stems of the Tremella and tear it into pieces.

4. Wash the wolfberries and red dates and soak them for later use.

5. Add the chopped white fungus in 1. and steam in an electric rice cooker (with two cups of water in the outer pot) until the colloid of the white fungus is released and the soup becomes thick.

6. Add red dates (broken ends) and wolfberries, and steam once in an electric rice cooker (put a cup of water in the outer pot).

7. Add sugar substitute according to personal taste and season.
