【Brown Sugar Egg Cake】

★ Ingredients: 6 eggs, 130c.c. blackstrap molasses, 180g low-gluten flour, 60g fine sugar, 3.5 tablespoons whole milk, 1.5 teaspoons tartar powder, 3 tablespoons salad oil, 1.5 teaspoons salt, 1.5 teaspoons baking powder, 1.5 teaspoons vanilla powder.

★Method:

  1. Preheat the oven first.

  2. Separate the egg whites and yolks of 6 eggs and put them into two mixing bowls respectively.

  3. Add tartar powder to the bowl with egg whites, stir with a whisk until foamy, then add fine sugar and beat until the egg whites are sticky and not easy to drip.

  4. Beat the egg yolks in a mixing bowl with a whisk until they turn white, then add whole milk, salad oil, salt, baking powder, vanilla powder and blackstrap molasses. Stir well, then pour in the low-gluten flour that has been filtered through a sieve and stir again.

  5. In a bowl with egg yolks, pour in the foamed egg whites and stir until no more egg whites are visible.

  6. Pour (5) into a cake container, place in an oven at 170 degrees Celsius on the top and 140 degrees Celsius on the bottom, and bake for 30 minutes.

【Brown sugar agar jelly】

★Ingredients: brown sugar, agar, longan, and red dates.

★Method:

  1. First, use scissors to cut the dried agar into small pieces of about 1 cm to save time for melting.

  2. Put brown sugar, longan and red dates into boiling water and cook. After the flavors blend, turn to low heat. Add appropriate amount of shredded agar, stir until everything is dissolved, then turn off the heat. Wait for it to cool down and refrigerate.

  3. After about 4 hours of refrigeration, it will become a jelly-like state and can be eaten directly, or you can add fresh milk or lemon juice to enhance the flavor according to your personal preference.

★Reminder: The ratio of agar to water varies among brands. It is recommended to refer to the packaging instructions before use.

【Brown Sugar Rice Cake】

★Ingredients: 3/4 cup of brown sugar, 1.5 cups of sweet potato starch, 1/2 cup of cornstarch, appropriate amount of soybean flour, 4.5 cups of water.

★Method:

  1. Take a clean, oil-free container, pour in sweet potato starch, cornstarch and 1 cup of water, mix well to make starch water and set aside.

  2. Pour brown sugar and half a cup of water into a pot, cook over high heat until a caramel aroma wafts out, then add 3 cups of water and continue to cook until the water boils, then immediately pour in the starch water and stir into a paste.

  3. Pour into a container lightly greased with oil, and apply a little oil on the surface, cover with a piece of plastic wrap, flatten with your hands to an even thickness, then transfer to a steamer and steam over medium heat for 10 to 20 minutes. Remove from the steamer and let cool to make brown sugar rice cake.

  4. Put the soybean powder into a frying pan and stir-fry over low heat until the originally milky yellow soybean powder turns light brown and make sure the raw smell of soybeans has been removed.

  5. When eating, just cut the cooled brown sugar rice cake into pieces, put it into a bowl, sprinkle with soybean powder and enjoy.
